Our Cabernet Sauvignon is a noble wine whose berry-fragrance and flavor is a famous mixture of currants and cassis. It ages beautifully in our new French oak barrels, in that ancient tradition interplay of time and tannin, to a deep, clear taste between medium and full-bodied that can only be described as classic Cabernet.
The 2010 Celani Family Vineyard Cabernet Sauvignon is a blend of 93% Sauvignon, 4% Merlot and 3% Cabernet Franc. Aged 20 months in 90% new French oak barrels, the blend was neither fined nor filtered. As this wine begins to open, super-intense aromas fly from the glass of roasted blackberry, black raspberry, cranberry, pomegranate, violets and plums. Delicate notes of cinnamon, sweet spicy oak and Asian spices contribute to the aromatic profile. While the entry of this young Cabernet exudes power, its intensity is complimented by the solid core of black cherries supported by brown sugary, chocolaty and cinnamon highlights, and velvety tannins. The intense flavors continue through to a long lingering finish. The 2010 Cabernet will drink beautifully over the next 15 years.
